LESLIE’S CARROT CAKE Success!


July 25, 2010 Carrot Cake Test


LESLIE’S CARROT CAKE 

Namaste Spice Cake Mix- 26oz. 
3 Eggs 
2 Cups Carrot Meal 
1 Cup Olive Oil 
1 Golden Delicious Apple-Grated w/ skin + Apple Juice to measure 1 Cup total 
1 teas. Lemon juice 
1 Tbs. Grated Lemon Zest 
½ teas. Cinnamon 
½ teas. Cloves 

 
Yielded 18 reg. cupcakes plus 1 small Bundt baked in a 6 cup mini-bundt pan. 

 
Carol’s Notes: Leslie tolerates olive oil however I would like to make this cake 
again using lighter flavored oil. Safflower was recommended by my Natural Foods 
guy. Also, I added more cinnamon because of the “veggie” olive oil taste and 
Noelle loves to add ground cloves to her carrot cake and although this Namaste 
mix is a Spice Cake we both felt it helped with our added ingredients. The Lemon 
juice and Lemon zest was added to imitate the zing of the crushed pineapple that 
we’ve substituted grated apple for. The moisture is great but we love the 
pineapple in our original recipe and since Leslie has issues with it we wanted her 
to still enjoy the "Zip".  

 So far this recipe smells heavenly as it bakes. When you begin with great 
ingredients it is easy to get a great result.

    The reality is I don't like Carrot Cake...UNTIL NOW!! This baby was moist, sweet without being sugary and really tasty.
